Chicken Cacciatore
An easy throw-together-main course with the most delicious sauce full of incredible flavors!
Chicken Cacciatore
A rustic Italian chicken dish made with bell peppers and mushrooms simmered in tomato sauce.

Ingredients
- 2 tbsp. tablespoons olive oil
- 2 8.5 oz packages of Rebellyous Plant-Based Patties
- 1 medium sized onion, diced
- 1 medium red bell pepper, diced
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1 cup vegetable broth
- 3 tbsp capers
- 1 28 oz. can diced tomatoes in juice
- 1/4 cup fresh basil, chopped
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- In a skillet or large heavy-bottom pot, heat oil over medium heat. Add Rebellyous patties and cook just until lightly golden on each side. Remove from pan and set aside.
- Using the same skillet or pot, add onion and red bell pepper. Cook until tender and onions are translucent, about 5 minutes, stirring frequently. Add garlic and cook for 2 more minutes
- Add white wine and stir then add vegetable broth and capers. Next, add diced tomatoes with juice. Stir well. Add basil, oregano, salt, and pepper, and stir.
- Turn heat down to medium-low, cover, and simmer for 15-20 minutes
- Add Rebellyous patties to cacciatore and simmer for 5 more minutes, uncovered. Serve as is or over pasta. Enjoy!
