  • 4 tsp Olive Oil, Divided
  • 4 whole Rebellyous Chicken Patties
  • 3 cups Marinara Sauce, Divided
  • 1 cup Shredded Vegan Mozzarella-Style Cheese
  • 1 lb Cooked Spaghetti, Fettuccine, or Linguine
  • ¼ cup Fresh Basil, Thinly Sliced

  • Preheat your oven to 400 degrees and line a baking sheet with parchment paper or aluminum foil.
Drizzle 2 teaspoons of the oil all over, to coat.
Place the chicken patties on the pan, evenly spaced, and drizzle with the remaining 2 teaspoons of oil.
Bake for 15 – 20 minutes, flipping after about 10 minutes, until crispy and golden brown all over
Remove from oven and spoon about ¼ cup of marinara sauce over each patty. Sprinkle the cheese on top and bake for an additional 3 – 5 minutes to melt the cheese. Broil on high for 1 – 2 minutes to lightly toast the cheese.
  • Divide the cooked pasta between four plates, topping each with ½ cup of marinara sauce. Place one patty on each plate and finish with fresh basil. Serve hot!

Notes: Try using raw zucchini noodles or sweet potato spirals as a gluten-free alternative to conventional pasta. This recipe is also great served over cooked rice, riced cauliflower, or mashed potatoes for a change of pace.
