Chicken Cacciatore

A rustic Italian chicken dish made with bell peppers and mushrooms simmered in tomato sauce.

  • 2 tbsp. tablespoons olive oil
  • 2 8.5 oz packages of Rebellyous Plant-Based Patties
  • 1 medium sized onion, diced
  • 1 medium red bell pepper, diced
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 cup vegetable broth
  • 3 tbsp capers
  • 1 28 oz. can diced tomatoes in juice
  • 1/4 cup fresh basil, chopped
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper


  • In a skillet or large heavy-bottom pot, heat oil over medium heat. Add Rebellyous patties and cook just until lightly golden on each side. Remove from pan and set aside.
  • Using the same skillet or pot, add onion and red bell pepper. Cook until tender and onions are translucent, about 5 minutes, stirring frequently. Add garlic and cook for 2 more minutes
  • Add white wine and stir then add vegetable broth and capers. Next, add diced tomatoes with juice. Stir well. Add basil, oregano, salt, and pepper, and stir.
  • Turn heat down to medium-low, cover, and simmer for 15-20 minutes
  • Add Rebellyous patties to cacciatore and simmer for 5 more minutes, uncovered. Serve as is or over pasta. Enjoy!
