Preheat oven to 425°F and line a baking sheet with parchment paper. Add tenders and bake for 5 minutes just to defrost but not fully cook. Remove from oven and set aside.
Heat waffle iron to medium-high. In a mixing bowl, combine flour, sugar, baking powder, and salt to make the batter. Set aside. In a second mixing bowl, whisk together the soy milk and oil. Slowly whisk the liquid mixture into the dry mixture. Whisk until just combined, it’s okay to have lumps.
Spray waffle iron with cooking spray oil. Add 1 or 2 plant-based tenders (depending on waffle size preference) and top with ½ cup of batter. Close waffle iron and press down firm to cook. Cook for 2-3 minutes. Remove waffle tenders and repeat with remaining tenders and batter.
Serve topped with maple syrup or other desired toppings. Enjoy!
